Staff rule
Phones and tablets keep working on battery. Printers and network gear need UPS power.
AIR rule
Keep one cellular manager device live, use KDS visual workflow if screens have power, and switch to paper if printers are down.
Internet outage

Restaurant Wi-Fi may still exist, but the cloud path is gone unless cellular or hotspot is available.
AIR rule
Use a dedicated 5G hotspot/router or cellular tablets. Mark any local-only work until it syncs.
Processor outage

Offline card capture is risk acceptance, not an approval. Bad cards can still fail later.
AIR rule
Use cash, payment links when Square returns, or Square-supported offline mode with a manager-set max amount.
Printer or KDS outage

One surface becomes the source of truth. Avoid duplicate fires when the missing device returns.
